  • 2 boneless skinless chicken breasts sliced in half lengthwise
  • all-purpose flour for coating
  • salt and black pepper to taste
  • lemon zest adds brightness
  • 2 eggs beaten
  • panko breadcrumbs for crispy coating
  • olive oil cooking spray for air fryer basket and coating

Instructions
 

  • Set up a dredging station with three bowls: one with flour, salt, pepper, and lemon zest; one with beaten eggs; and one with panko breadcrumbs.
  • Slice chicken breasts in half lengthwise to make thin filets. Pat them dry.
  • Coat each piece of chicken in flour mixture, dip in eggs, then press into panko breadcrumbs until fully coated.
  • Lightly spray air fryer basket with olive oil spray. Arrange chicken pieces without overlapping.
  • Air fry at 375°F for 6 minutes. Flip, spray again, and cook another 6–8 minutes until golden and crisp.
  • Check internal temperature (should reach 165°F). Let rest for 5–10 minutes before slicing.
  • Serve warm with your choice of sides like salad, mashed potatoes, or roasted veggies.

Notes

Don’t overcrowd the basket and be sure to spray both sides with oil for a crispy crust. Resting after cooking keeps juices locked in.
