Ingredients
  

For the Bars

  • 1/2 cup unsalted butter softened (113g)
  • 1 cup granulated sugar (200g)
  • 1/4 cup brown sugar packed (50g)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour (180g)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 medium apple peeled and finely diced

For the Topping

  • 2 tbsp granulated sugar (25g)
  • 1 tsp ground cinnamon

Instructions
 

  • Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving an overhang.
  • Cream butter, granulated sugar, and brown sugar until light and fluffy.
  • Add egg and vanilla. Beat until smooth and glossy.
  • In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
  • Gradually mix dry ingredients into the wet mixture. Stir until just combined.
  • Fold in the diced apple gently. Batter will be thick.
  • Spread into the prepared pan. Mix topping sugar and cinnamon, then sprinkle over the batter.
  • Bake for 25–30 minutes until edges are golden and a toothpick comes out clean.
  • Let cool completely before slicing into bars.

Notes

Try adding a simple glaze or caramel drizzle for a festive twist. These bars also freeze well for make-ahead treats!
