For the Topping

Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch pan with parchment paper, leaving an overhang.
Cream butter, granulated sugar, and brown sugar until light and fluffy.
Add egg and vanilla. Beat until smooth and glossy.
In a separate bowl, whisk flour, baking powder, salt, cinnamon, and nutmeg.
Gradually mix dry ingredients into the wet mixture. Stir until just combined.
Fold in the diced apple gently. Batter will be thick.
Spread into the prepared pan. Mix topping sugar and cinnamon, then sprinkle over the batter.
Bake for 25–30 minutes until edges are golden and a toothpick comes out clean.
Let cool completely before slicing into bars.
Notes
Try adding a simple glaze or caramel drizzle for a festive twist. These bars also freeze well for make-ahead treats!
