Salad Ingredients

  • 2 cups cooked chicken breast shredded or chopped
  • 3 cups shredded napa or green cabbage
  • 1 cup shredded carrots
  • 0.5 cup sliced almonds toasted if desired
  • 0.5 cup dried cranberries
  • 2 green onions thinly sliced
  • 0.25 cup chopped cilantro
  • 1 tbsp sesame seeds optional

Dressing Ingredients

  • 3 tbsp rice vinegar
  • 2 tbsp soy sauce or tamari
  • 1 tbsp sesame oil
  • 1 tbsp honey or maple syrup
  • 1 tsp grated ginger fresh
  • 1 clove garlic minced
  • 2 tbsp olive oil

Instructions
 

  • In a large bowl, combine the chicken, cabbage, carrots, almonds, cranberries, green onions, and cilantro. Toss lightly.
  • In a small bowl or jar, whisk together all dressing ingredients until smooth and well blended.
  • Pour the dressing over the salad and toss to coat evenly.
  • Sprinkle sesame seeds on top before serving for a final crunch.

Notes

Chill for 15–20 minutes before serving to allow the flavors to meld. If meal prepping, store the dressing separately and toss before eating for best texture. Great with rice noodles or in wraps!
