  • 2 rounds Boursin Garlic & Fine Herbs Cheese
  • 1 container cherry tomatoes
  • 3-4 tbsp olive oil
  • 1 tbsp garlic minced
  • 0.25-0.5 tsp crushed red pepper flakes adjust to taste
  • 1 pinch salt to taste
  • 1 tbsp fresh herbs basil, thyme, or parsley, chopped
  • pasta of choice penne or rigatoni recommended
  • 0.25 cup pasta water reserved
  • Parmesan cheese freshly grated, for serving

Instructions
 

  • Preheat oven to 400°F (200°C). Bring a large pot of salted water to a boil for the pasta.
  • In a baking dish, place Boursin rounds in the center. Surround with cherry tomatoes.
  • Drizzle olive oil over everything, then sprinkle garlic, crushed red pepper flakes, salt, and fresh herbs. Toss tomatoes gently to coat.
  • Bake for 15–20 minutes, until tomatoes are soft and Boursin is melty.
  • Meanwhile, cook pasta according to package instructions. Reserve ¼ cup pasta water before draining.
  • Remove the baking dish from the oven. Mash tomatoes and Boursin together into a smooth sauce.
  • Add pasta and reserved pasta water to the dish. Toss until coated and glossy.
  • Finish with Parmesan cheese and fresh herbs. Serve warm with optional extra olive oil drizzle.

Notes

Try using different Boursin flavors like Shallot & Chive. Add protein like grilled chicken or shrimp for a heartier version. Stir in spinach or arugula for extra greens.
