Ingredients
  

Main Ingredients

  • 5.2 oz Boursin Garlic & Fine Herbs cheese or other Boursin varieties
  • 12 oz cherry tomatoes
  • 10 oz rotini or penne pasta
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 0.5 tsp red pepper flakes optional, for heat
  • salt & black pepper to taste
  • 0.25 cup pasta water reserved from cooking
  • 0.25 cup fresh basil chopped
  • freshly grated Parmesan optional, for serving

Instructions
 

  • Preheat oven to 400°F (200°C).
  • Place Boursin cheese in the center of a baking dish. Surround with cherry tomatoes, drizzle with olive oil, and season with salt, pepper, garlic, and red pepper flakes (if using).
  • Bake for 25–30 minutes, until the tomatoes are blistered and cheese is golden and soft.
  • While baking, cook pasta in salted water until al dente. Reserve ¼ cup of pasta water before draining.
  • Remove the dish from the oven and mash the tomatoes and Boursin together to form a creamy sauce.
  • Add cooked pasta and reserved pasta water to the dish. Stir gently until well coated.
  • Top with fresh basil and optional Parmesan. Serve hot and enjoy!

Notes

For a heartier version, add cooked chicken, crispy pancetta, or sautéed spinach. Leftovers make a great pasta salad when served cold. Don’t forget to save pasta water — it’s the secret to a silky sauce!
