Ingredients
  

For the Cajun Seasoning

  • 1 tsp paprika
  • 1/2 tsp cayenne pepper adjust to taste
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme or oregano
  • 1/4 tsp black pepper
  • 1/4 tsp salt

For the Pasta

  • 8 oz linguine or spaghetti or pasta of choice
  • 1 lb shrimp peeled and deveined
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 tbsp all-purpose flour
  • 1/2 cup chicken broth
  • 1/2 cup fire-roasted tomatoes drained
  • 1/2 cup heavy cream
  • 1/3 cup Parmesan cheese grated

Instructions
 

  • Mix Cajun seasoning ingredients in a small bowl. Set 1 tsp aside for the sauce.
  • Coat shrimp in Cajun seasoning. Toss to coat evenly.
  • Cook pasta in salted boiling water until al dente. Drain and set aside.
  • Heat oil in a skillet. Sear shrimp until pink and opaque, about 2 minutes per side. Transfer to a plate.
  • In the same skillet, melt butter. Add onion and cook until soft, then stir in garlic.
  • Stir in flour and reserved Cajun seasoning. Slowly add chicken broth, scraping up bits from the pan.
  • Add fire-roasted tomatoes and heavy cream. Simmer until slightly thickened and creamy.
  • Toss in cooked pasta and Parmesan. Stir to coat. Return shrimp and combine gently. Serve warm.

Notes

Add a splash of reserved pasta water if the sauce thickens too much. Adjust cayenne for extra heat. Garnish with parsley and serve with garlic bread or salad.
