Ingredients

  • 2 tbsp butter
  • 2 lb boneless skinless chicken breasts cut into 1-inch cubes
  • salt and pepper to taste
  • 1 yellow onion diced
  • 1 stick celery diced
  • 4 cups broccoli florets about ½ lb, fresh or thawed and patted dry if frozen
  • 1 tbsp olive oil
  • 10.5 oz cream of chicken soup canned or homemade
  • 2/3 cup sour cream
  • 0.5 cup milk
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.5 tsp mustard powder
  • 2.5 cups shredded cheddar cheese divided

Topping

  • 0.5 cup crushed Ritz crackers or panko breadcrumbs
  • 2 tbsp butter melted

Instructions
 

  • Preheat oven to 350°F. Lightly grease a 9x13-inch casserole dish.
  • Cut chicken into 1-inch cubes. Season with salt and pepper.
  • In a large skillet, melt butter over medium heat. Add chicken, onion, and celery. Cook for 3–5 minutes until chicken starts to brown and vegetables soften.
  • Add broccoli and olive oil. Stir and cook for another 3–5 minutes until broccoli is just tender.
  • Turn off heat. Stir in cream of chicken soup, sour cream, milk, garlic powder, onion powder, and mustard powder. Mix until smooth. Fold in half the shredded cheese.
  • Spread mixture into prepared baking dish. Top with remaining cheddar cheese.
  • Cover with foil and bake for 20 minutes.
  • Meanwhile, mix melted butter with crushed Ritz crackers (or panko).
  • Remove foil, increase oven to 400°F, and sprinkle cracker topping over casserole. Bake uncovered for 8–10 minutes until topping is golden brown.
  • Let rest for 5 minutes before serving. Serve warm and enjoy!

Notes

Prep ahead tip: Assemble the casserole (without topping) up to 2 days in advance. Store covered in the fridge and bake when ready. Add topping just before final bake to keep it crispy.
