Ingredients
  

  • 750 g boneless, skinless chicken thighs cut into pieces
  • 3.5 Tbsp butter divided
  • 3 slices streaky bacon chopped
  • 2 large leeks cleaned and sliced
  • 2 celery stalks diced
  • 2 cloves garlic minced
  • 1/3 cup Chardonnay or dry white wine
  • 1/4 cup flour
  • 1 Tbsp Dijon mustard
  • 2 sprigs thyme fresh
  • 2 bay leaves
  • 1 cup chicken broth
  • 1 cup heavy cream
  • salt and black pepper to taste
  • 2 sheets puff pastry thawed if frozen
  • 1 egg separated; white for sealing, yolk for brushing

Instructions
 

  • Melt half the butter in a skillet. Season chicken and sear until just white on the outside. Set aside.
  • In the same pan, cook bacon until fat renders. Add leeks, celery, and garlic. Sauté gently for 5 minutes.
  • Deglaze with white wine, scraping up bits. Simmer until mostly reduced.
  • Add remaining butter. Stir in flour and cook briefly. Slowly whisk in chicken broth, then cream. Add mustard, thyme, bay leaves, salt, and pepper.
  • Return chicken to pan and simmer 5 minutes until thickened. Remove from heat and cool 1 hour.
  • Preheat oven to 375°F (200°C). Pour cooled filling into baking dish. Top with puff pastry, seal edges, and brush with egg yolk. Cut a steam vent.
  • Bake for 45 minutes until golden and puffed. Let rest 5 minutes before serving.

Notes

Cool the filling before topping to ensure the pastry rises properly. Taste your sauce before baking — balance seasoning and acidity.
