  • 2 cups cooked chicken rotisserie or leftover, shredded
  • 2 tbsp butter
  • 1 tbsp olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup carrots diced
  • 1 cup frozen peas
  • 0.5 cup celery chopped
  • 0.33 cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • 1 cup milk or half-and-half
  • 1 tsp dried thyme
  • 0.5 tsp garlic powder optional
  • salt and black pepper to taste
  • 1 can refrigerated biscuits like Pillsbury Grands
  • 0.5 cup shredded cheddar cheese optional
  • fresh parsley chopped, for garnish

Instructions
 

  • Preheat oven to 400°F (200°C) and grease a medium casserole dish.
  • In a large skillet, heat butter and olive oil over medium heat. Add onion, carrots, and celery. Sauté for 5–7 minutes until soft.
  • Add garlic and thyme. Cook for 1 minute until fragrant.
  • Sprinkle flour over vegetables and stir well. Cook for 1–2 minutes to eliminate raw flour taste.
  • Slowly add chicken broth, stirring constantly. Then pour in the milk. Stir until sauce is smooth and thickened.
  • Stir in cooked chicken, peas, salt, pepper, and garlic powder (if using). Simmer for 5 minutes.
  • Transfer mixture to the casserole dish and spread evenly.
  • Top with biscuits, spacing them slightly apart. Sprinkle with cheddar if desired.
  • Bake uncovered for 20–25 minutes until biscuits are golden and filling is bubbling.
  • Let rest 5–10 minutes before serving. Garnish with fresh parsley.

Notes

Make ahead tip: Prepare the filling and refrigerate up to 24 hours before baking. Add biscuits just before baking. Freeze unbaked portions for future cozy meals.
