Ingredients
  

Main Ingredients

  • 2 cups cooked chicken breast shredded or diced
  • 0.5 cup Craisins (dried cranberries)
  • 0.5 cup celery finely chopped
  • 0.25 cup red onion minced
  • 0.5 cup mayonnaise or Greek yogurt use yogurt for lighter option
  • 1 tbsp Dijon mustard
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 tbsp fresh lemon juice
  • 0.25 cup chopped pecans or walnuts adds crunch
  • fresh parsley or dill for garnish

Instructions
 

  • If cooking chicken fresh, poach or bake until tender, then shred or dice. Leftover rotisserie chicken works great too.
  • In a large mixing bowl, combine chicken, celery, red onion, and Craisins.
  • In a separate bowl, whisk together mayonnaise (or Greek yogurt), Dijon mustard, lemon juice, garlic powder, salt, and pepper.
  • Pour dressing over chicken mixture and gently stir to coat all ingredients.
  • Fold in chopped nuts and fresh herbs.
  • Taste and adjust seasoning as needed. Chill for at least 30 minutes before serving.
  • Serve in sandwiches, wraps, over greens, or with crackers and fruit.

Notes

For extra sweetness, add halved grapes or diced apples. To make dairy-free, use plant-based mayo or yogurt. Toast the nuts for even more flavor and crunch.
