  • 2 boneless skinless chicken breasts patted dry
  • 1 tbsp olive oil
  • 2 cloves garlic minced
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.5 tsp dried Italian herbs
  • 0.5 cup low-sodium chicken broth
  • 0.5 cup Greek yogurt full-fat preferred
  • 2 tbsp grated Parmesan cheese
  • 1 tsp lemon juice fresh
  • fresh parsley or chives for garnish

Instructions
 

  • Pat chicken breasts dry and season both sides with salt and pepper.
  • Heat olive oil in a skillet over medium heat. Sear chicken for 4–5 minutes per side until golden. Remove and set aside.
  • Add garlic to the pan and sauté for 30 seconds until fragrant.
  • Pour in chicken broth and stir to deglaze the pan. Add Italian herbs and let simmer for 1 minute.
  • Reduce heat to low and stir in Greek yogurt and Parmesan until smooth and creamy.
  • Return chicken to skillet and simmer gently for 5–7 minutes, spooning sauce over chicken until fully cooked through.
  • Stir in lemon juice and garnish with chopped parsley or chives before serving.

Notes

This creamy garlic herb chicken is perfect over rice, pasta, mashed potatoes, or even in wraps. For a dairy-free option, use coconut yogurt and omit the cheese.
