Ingredients

  • 1 pound chicken breast diced
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 0.5 cup chicken stock
  • 0.5 cup Parmesan cheese grated
  • 2 tsp Italian seasoning
  • Salt and pepper to taste
  • 8 ounces pasta penne or fettuccine
  • fresh parsley chopped, for garnish

Instructions
 

  • Boil pasta in salted water until al dente. Drain and set aside.
  • Heat olive oil in a skillet over medium-high heat. Add diced chicken, season with salt and pepper, and cook until golden and cooked through. Remove and set aside.
  • In the same skillet, reduce heat to medium and add garlic. Cook until fragrant, about 1 minute.
  • Pour in heavy cream, chicken stock, and Italian seasoning. Simmer gently until the sauce slightly thickens.
  • Return chicken to the skillet, add cooked pasta and Parmesan cheese. Stir to combine until everything is coated in sauce.
  • Simmer for 2–3 minutes to let the sauce cling to the pasta. Garnish with chopped parsley and serve hot.
