  • 8 oz ditalini pasta
  • 1 lb Italian sausage mild or spicy
  • 1 small onion diced
  • 3 cloves garlic minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup Parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp red pepper flakes optional
  • salt and black pepper to taste
  • fresh parsley for garnish
  • 0.5 cup pasta water reserved

Instructions
 

  • Bring a large pot of salted water to a boil. Add ditalini and cook until al dente (8–10 minutes). Reserve ½ cup of pasta water, then drain.
  • In a large skillet over medium heat, brown the sausage, breaking it into crumbles. Cook until deeply golden.
  • Add onion and garlic. Sauté for 3 minutes until onions are translucent and fragrant.
  • Reduce heat to medium-low. Stir in heavy cream and chicken broth, scraping up browned bits from the pan.
  • Add Parmesan cheese gradually, stirring to melt completely. Add Italian seasoning and red pepper flakes. Simmer for 3–5 minutes until sauce thickens slightly.
  • Add cooked pasta to the sauce. Toss to coat. Add a splash of pasta water to loosen the sauce if needed.
  • Season with salt and pepper to taste. Garnish with fresh parsley and extra Parmesan. Serve warm.

Notes

Serve this dish over arugula, rice, or even inside wraps or baguettes for variety. Add spinach or sun-dried tomatoes for more veggies. Avoid high heat when adding cream to prevent curdling.
