Ingredients
  

Main Ingredients

  • 2 tsp minced garlic
  • 1 tbsp vegetable oil for chicken
  • 1 lb chicken breasts boneless, skinless, cut into 1-inch pieces
  • salt to taste
  • 1 tsp vegetable oil for green beans
  • 2 1/2 cups green beans trimmed

Sauce

  • 2 tsp corn starch
  • 1/4 cup low-sodium chicken broth
  • 1/4 cup soy sauce low sodium preferred
  • 3 tbsp honey
  • black pepper to taste

Instructions
 

  • Heat 1 tsp of oil in a large skillet over medium-high heat. Add green beans and cook until bright and just tender. Remove and set aside, covered to keep warm.
  • Wipe the skillet clean. Heat remaining oil over high heat. Add seasoned chicken in a single layer and cook until browned. Add garlic and cook for 30 seconds more.
  • Return green beans to the skillet. Stir to combine with chicken and warm through.
  • In a small bowl, whisk broth, honey, and soy sauce. In another bowl, dissolve cornstarch in a splash of cold water.
  • Pour sauce into the skillet. Once bubbling, add cornstarch slurry and simmer until sauce thickens into a glaze.
  • Serve hot, as is or with rice. Optionally top with sesame seeds or chopped peanuts.

Notes

Try not to overcrowd the pan so the chicken browns nicely. Be careful not to burn the garlic, and always mix cornstarch with cold water first. Adjust salt and sweetness to your preference. Great served over rice or cauliflower rice.
