  • 1 lb chicken thighs or breasts cut into bite-sized pieces
  • 1 tbsp curry powder
  • 1 onion chopped
  • 2 cloves garlic minced
  • 1 tbsp fresh ginger grated
  • 1 cup chicken broth or stock
  • 1 can coconut milk full-fat preferred
  • 1/2 cup peas optional
  • fresh coriander (cilantro) for garnish

Instructions
 

  • Heat oil in a skillet and sauté the chopped onions until soft and fragrant.
  • Add garlic and ginger, cooking for another minute until aromatic.
  • Sprinkle in the curry powder and stir well for 1–2 minutes to deepen the flavor.
  • Add the chicken pieces and stir to coat them in the spices. Cook until slightly browned.
  • Pour in the chicken broth and coconut milk. Stir to combine and scrape up browned bits.
  • Simmer gently until chicken is fully cooked and sauce has thickened slightly (10–15 mins).
  • Stir in peas and cook for another 2–3 minutes until warmed through.
  • Finish with chopped fresh coriander. Serve hot over rice or with flatbread.

Notes

This curry gets better the next day. Swap in your favorite veggies or add chili flakes for more heat. Frying the curry powder first is key for unlocking its full flavor.
