1lbchicken thighs or breastscut into bite-sized pieces

1onionchopped

1tbspfresh gingergrated
1cupchicken broth or stock
1cancoconut milkfull-fat preferred

Instructions
Heat oil in a skillet and sauté the chopped onions until soft and fragrant.
Add garlic and ginger, cooking for another minute until aromatic.
Sprinkle in the curry powder and stir well for 1–2 minutes to deepen the flavor.
Add the chicken pieces and stir to coat them in the spices. Cook until slightly browned.
Pour in the chicken broth and coconut milk. Stir to combine and scrape up browned bits.
