Ingredients
  

Filling

  • 2 cups rotisserie chicken shredded
  • 1 small bag frozen peas and carrots thawed
  • 2 18.8 oz cans cream of chicken pot pie soup
  • 1/4 tsp seasoned salt
  • 1/4 tsp garlic powder
  • 1/8 tsp dried thyme leaves
  • freshly cracked black pepper to taste

Crust & Finish

  • 1 refrigerated 2-pack pie crust
  • 1 egg
  • 2 tsp water for egg wash
  • olive oil spray optional, for crust lift and color

Instructions
 

  • Preheat oven to 450°F. Lightly spray a 9-inch pie dish with nonstick spray. Press one pie crust into the dish, smoothing into corners.
  • In a large bowl, combine shredded rotisserie chicken, thawed peas and carrots, cream of chicken soup, seasoned salt, garlic powder, thyme, and black pepper. Mix until well combined.
  • Spoon filling evenly into prepared pie crust, leaving just enough space for the top crust to seal.
  • Unroll the second pie crust and lay it over the filling. Trim excess dough and crimp edges to seal. Cut a small “X” or slits in the center for steam vents.
  • Whisk together egg and water, then brush over the top crust for shine. Optionally spray lightly with olive oil for golden color.
  • Bake on the middle rack for 12–15 minutes until crust starts to turn golden. Cover edges with foil if browning too quickly. Bake another 15 minutes until golden and bubbling.
  • Remove from oven and let rest at least 20 minutes before slicing. This helps the filling thicken and hold its shape.

Notes

Customize with extra veggies, fresh herbs, or substitute puff pastry for the crust. Great for meal prep — freezes and reheats well.
