Ingredients
  

Chicken Salad

  • 12 oz cooked chicken breast finely chopped
  • 1/3 cup light mayonnaise
  • 1/2 cup celery chopped
  • 1/3 cup red onion diced
  • 2 Tbsp chicken broth optional, for moisture
  • 1 tsp Dijon mustard
  • 1/2 tsp seasoned salt
  • black pepper to taste

Instructions
 

  • Finely chop the cooked chicken breast. Leftover roasted or rotisserie chicken works well.
  • Dice the celery and red onion for crunch and color.
  • In a medium bowl, combine the chicken, celery, and red onion.
  • Add the light mayonnaise and Dijon mustard. Stir gently until everything is creamy and well coated.
  • If the salad seems dry, mix in 1–2 tablespoons of chicken broth.
  • Season with seasoned salt and freshly ground black pepper to taste. Adjust as needed.
  • Chill before serving to let the flavors meld together.
  • Serve in a sandwich, wrap, lettuce cup, or over a bed of greens.

Notes

For a lighter twist, swap half of the mayo with Greek yogurt. Add herbs, fruit, or nuts to make it your own. Always chill before serving for best flavor and texture.
