  • 0.5 cup low-sodium chicken broth
  • 2 tbsp olive oil
  • 1 tsp kosher salt
  • 0.5 tsp onion powder
  • 0.5 tsp dried thyme
  • 0.5 tsp paprika
  • 0.25 tsp black pepper
  • 0.25 tsp garlic powder
  • 4 boneless, skinless chicken breasts

Instructions
 

  • Pour chicken broth into the bottom of your slow cooker.
  • In a small bowl, mix together salt, onion powder, thyme, paprika, black pepper, and garlic powder.
  • Drizzle olive oil over chicken breasts, then coat evenly with the seasoning mix using your hands.
  • Place chicken in a single layer inside the slow cooker. Pour any remaining broth and seasoning over the top.
  • Cover and cook on LOW for 4–6 hours or on HIGH for 3–4 hours, until chicken reaches an internal temperature of 165°F (74°C).
  • Remove chicken and let rest for a few minutes. Then slice or shred depending on how you plan to serve it.
  • Optional: Spoon a bit of the leftover broth over the chicken for added flavor and moisture before serving.
