Ingredients
  

Mousse Filling

  • 200 g white chocolate chopped
  • 1 cup heavy cream chilled
  • 2 large egg whites
  • 2 tablespoons sugar

Tartlet Shells

  • 12 baked tartlet shells completely cooled

Instructions
 

  • Chop the white chocolate and melt it gently over a double boiler or in the microwave in short bursts, stirring until smooth. Let cool slightly.
  • In a chilled bowl, whip the heavy cream to soft peaks. Set aside in the refrigerator.
  • In another clean bowl, beat egg whites until foamy. Gradually add sugar and continue beating until stiff peaks form.
  • Gently fold the whipped cream into the cooled white chocolate until just combined. Carefully fold in the egg whites to keep the mixture light and airy.
  • Spoon or pipe the mousse into cooled tartlet shells. Smooth the tops or create decorative swirls.
  • Chill the filled tartlets in the refrigerator for at least 1 hour to set. Garnish with berries, chocolate shavings, or edible flowers before serving.

Notes

For a festive twist, garnish with crushed peppermint or citrus zest. For a rich pairing, serve with espresso or sparkling wine at your next celebration.
