Ingredients
  

For the Dressing

  • 1/2 cup extra virgin olive oil
  • 1/4 cup red wine vinegar
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/2 tsp garlic powder
  • 1 tsp Dijon mustard
  • salt and black pepper to taste

For the Pasta Salad

  • 12 oz short pasta farfalle, rotini, etc.
  • 1 red bell pepper chopped
  • 1 green bell pepper chopped
  • 1 English cucumber sliced
  • 1 cup cherry tomatoes halved
  • 1/2 red onion thinly sliced
  • 1/2 cup Kalamata olives pitted and halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped

Instructions
 

  • Cook the pasta in salted water until al dente. Drain and rinse with cold water to stop cooking and prevent sticking. Set aside.
  • In a small bowl, whisk together olive oil, red wine vinegar, oregano, basil, garlic powder, Dijon, salt, and pepper until emulsified.
  • Chop all veggies: bell peppers, cucumber, tomatoes, onion. Prepare olives and crumble feta.
  • In a large bowl, combine pasta, vegetables, olives, feta, and parsley. Pour in dressing and toss gently to coat.
  • Cover and refrigerate for at least 2 hours. Toss again before serving and adjust seasoning if needed.

Notes

To mellow red onion, soak slices in cold water for 5 minutes. Add chickpeas or grilled chicken to make this a full meal. Great for make-ahead meal prep or summer gatherings.
