Ingredients
  

  • 1/2 tbsp butter
  • 2 ribs celery diced
  • 3 carrots diced (use 3–4 large)
  • 1 clove garlic minced
  • 10 cups chicken stock or broth homemade if possible
  • 1 tsp salt to taste
  • 1/2 tsp black pepper freshly ground
  • 1/8 tsp dried rosemary
  • 1/8 tsp dried thyme
  • 1/8 tsp crushed red pepper flakes
  • 4 cups dry pasta or 1 batch homemade egg noodles your choice of shape
  • 3 cups rotisserie chicken shredded
  • 1 tsp Better Than Bouillon chicken base optional

Instructions
 

  • Melt butter in a large stock pot over medium-high heat. Add diced celery and carrots; cook for 3 minutes. Add garlic and cook 30 seconds more.
  • Pour in chicken stock. Add salt, pepper, rosemary, thyme, and crushed red pepper flakes. Taste and adjust seasoning as needed.
  • Bring to a gentle boil. Add noodles and cook until just al dente, following package instructions or about 6–8 minutes for dry pasta.
  • Stir in shredded rotisserie chicken. Let simmer for 2–3 minutes to heat through.
  • Taste and adjust seasoning again if needed. Optionally add a spoonful of chicken bouillon base for extra richness.
  • Ladle into bowls and serve hot with bread, herbs, or salad on the side.

Notes

If making ahead, cook noodles separately and add just before serving. Add a splash of lemon juice before serving for extra brightness. Skim off foam for a clear broth.
