4cupsdry pasta or 1 batch homemade egg noodlesyour choice of shape
3cupsrotisserie chickenshredded
1tspBetter Than Bouillon chicken baseoptional
Instructions
Melt butter in a large stock pot over medium-high heat. Add diced celery and carrots; cook for 3 minutes. Add garlic and cook 30 seconds more.
Pour in chicken stock. Add salt, pepper, rosemary, thyme, and crushed red pepper flakes. Taste and adjust seasoning as needed.
Bring to a gentle boil. Add noodles and cook until just al dente, following package instructions or about 6–8 minutes for dry pasta.
Stir in shredded rotisserie chicken. Let simmer for 2–3 minutes to heat through.
Taste and adjust seasoning again if needed. Optionally add a spoonful of chicken bouillon base for extra richness.
Ladle into bowls and serve hot with bread, herbs, or salad on the side.
Notes
If making ahead, cook noodles separately and add just before serving. Add a splash of lemon juice before serving for extra brightness. Skim off foam for a clear broth.
