Instructions
Preheat oven to 450°F (232°C) and spread a thin layer of marinara sauce on a baking pan.
Butterfly the chicken breasts to create thin, even pieces.
In one bowl, whisk eggs. In another bowl, mix panko, Italian breadcrumbs, garlic powder, and half the parmesan.
Dip chicken in egg, then press into breadcrumb mixture to coat well.
Heat olive oil in a skillet over medium-high heat. Sear chicken for about 2 minutes per side until golden.
Transfer chicken to baking pan. Top each piece with marinara, mozzarella, and remaining parmesan.
Bake for 10–15 minutes until cheese is bubbly and internal temperature reaches 165°F (74°C).
Garnish with fresh basil and serve immediately.
Notes
Goes great with pasta, salad, or crusty bread. To reheat, use oven or air fryer to maintain crispiness. Can be frozen and reheated later.
