Main Ingredients

  • 1 lb chicken breast or thighs boneless, skinless
  • 1 cup long-grain white rice
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 3 cloves garlic minced
  • 6 cups chicken broth
  • 1 tsp dried thyme
  • 1 tsp dried parsley
  • salt and black pepper to taste

Instructions
 

  • Set Instant Pot to sauté mode. Add a drizzle of oil, onion, carrots, and celery. Cook until softened, about 5 minutes.
  • Stir in garlic, thyme, parsley, salt, and pepper. Cook briefly until fragrant.
  • Place chicken into the pot and sprinkle rice evenly on top.
  • Pour in chicken broth, making sure the rice is submerged. Do not stir.
  • Seal lid and set to high pressure for 10 minutes. Let it naturally release pressure for 10 minutes.
  • Open the lid carefully. Remove chicken, shred with two forks, and return to the pot.
  • Stir well, taste, and adjust seasoning. Serve warm.

Notes

For variation, add peas, corn, spinach, or a squeeze of lemon at the end. To avoid mushy leftovers, consider cooking rice separately when making ahead for freezing.
