strawberry jam
preferably Italian, thick and fruity
icing sugar
for dusting
Instructions
Preheat oven to 325°F (165°C). In a stand mixer, cream butter, icing sugar, salt, and vanilla until light and fluffy.
Gradually add sifted flour and mix until dough just comes together. Don’t overmix.
Form dough into a ball, wrap in plastic, and chill for 30 minutes.
Roll out chilled dough to 1/4 inch thick. Cut out rounds with 3-inch cutter; cut heart centers in half of them.
Place cookies on parchment-lined baking sheets. Bake 15–20 minutes until lightly golden at edges. Cool completely.
Dust top (heart-cutout) cookies with icing sugar. Spread jam on bottom cookies, then gently press tops to form sandwiches.
Notes
Try other jams like raspberry, apricot, or cherry for variety. Shape variations like stars or flowers are also lovely.
