Korean Fried Chicken with Gochujang Sauce

Ingredients
  

Chicken & Marinade

  • 4 chicken breasts sliced into strips
  • 1 cup buttermilk
  • 1/2 tsp salt
  • 1/4 tsp white pepper
  • 1/4 tsp garlic salt

Crispy Coating

  • 1.5 cups all-purpose flour
  • 1 tsp salt
  • 1 tsp ground black pepper
  • 1/2 tsp garlic salt
  • 1/2 tsp celery salt
  • 1 tsp dried thyme
  • 1 tsp paprika
  • 1 tsp baking powder
  • 1 tsp chili flakes
  • oil for deep frying

Gochujang Sauce

  • 2 tbsp gochujang paste
  • 2 tbsp honey
  • 4 tbsp brown sugar
  • 4 tbsp soy sauce
  • 2 cloves garlic minced
  • 2 tsp minced ginger
  • 1 tbsp oil
  • 1 tbsp sesame oil
  • 3 spring onions thinly sliced
  • 1 tsp sesame seeds
  • 1/2 tsp chili flakes optional

Instructions
 

  • Marinate the chicken with buttermilk, salt, white pepper, and garlic salt. Cover and refrigerate for at least 1 hour.
  • Mix all coating ingredients in a bowl: flour, spices, and baking powder.
  • Remove chicken from marinade, let excess drip off, then coat thoroughly in seasoned flour mixture. Set aside.
  • Heat oil in a deep pan. Fry chicken in batches until golden and crispy. Transfer to a warm oven while finishing the rest.
  • In a saucepan, combine gochujang, honey, sugar, soy sauce, garlic, ginger, and both oils. Simmer until thick and glossy.
  • Toss the crispy chicken in warm sauce until coated. Garnish with spring onions, sesame seeds, and chili flakes.

Notes

For best results, toss the chicken in sauce just before serving to keep it crispy.
