Ingredients
  

Main Ingredients

  • 1 lb boneless, skinless chicken breasts lean and tender
  • 8 cups chicken broth
  • 2 cups chopped carrots
  • 2 cups chopped celery
  • 1 cup chopped onion
  • 3 cloves garlic minced
  • 2 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt or to taste
  • 0.5 tsp black pepper
  • 8 oz egg noodles
  • fresh parsley chopped, for garnish

Instructions
 

  • Place the chicken breasts in the bottom of the crockpot. Add the carrots, celery, onion, and garlic over the top.
  • Pour in the chicken broth and sprinkle in the thyme, rosemary, salt, and black pepper. Stir lightly to combine.
  • Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
  • Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
  • Add the egg noodles and stir. Cover and cook on high for 15–20 minutes until noodles are cooked through.
  • Taste and adjust seasoning if needed. Ladle the soup into bowls and garnish with fresh parsley before serving.

Notes

To make this soup even brighter, stir in a splash of lemon juice just before serving. Leftovers freeze well and taste even better the next day!
