Instructions
Place the chicken breasts in the bottom of the crockpot. Add the carrots, celery, onion, and garlic over the top.
Pour in the chicken broth and sprinkle in the thyme, rosemary, salt, and black pepper. Stir lightly to combine.
Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
Remove the chicken from the crockpot and shred it using two forks. Return the shredded chicken to the pot.
Add the egg noodles and stir. Cover and cook on high for 15–20 minutes until noodles are cooked through.
Taste and adjust seasoning if needed. Ladle the soup into bowls and garnish with fresh parsley before serving.
Notes
To make this soup even brighter, stir in a splash of lemon juice just before serving. Leftovers freeze well and taste even better the next day!
