Set Instant Pot to Sauté mode. Add olive oil and sear chicken breasts for 2–3 minutes per side until golden.
Add garlic, salt, pepper, and Italian seasoning. Stir briefly to coat.
Pour in chicken broth, scraping up any browned bits on the bottom of the pot.
Secure lid and cook on High Pressure for 8 minutes. Quick release the pressure once done.
Remove chicken and switch to Sauté mode again. Whisk in lemon juice, Greek yogurt, and Parmesan. Heat gently until smooth and slightly thickened.
