Instructions
Place sliced onions and broth in the bottom of a slow cooker. Lay chicken breasts on top. Cover and cook on high for 2½ hours.
Remove chicken, shred with two forks. Discard onions and broth. Set slow cooker to low.
Return shredded chicken to the slow cooker. Add cream cheese, ranch, hot sauce, cheddar, and mozzarella. Stir to combine.
Cook on low for another 30 minutes, stirring occasionally, until mixture is melted and smooth.
Taste and adjust seasoning. Add more hot sauce for heat or ranch for creaminess if needed.
Serve warm in the slow cooker with your choice of dippers. Garnish with chives if desired.
Notes
To save time, use rotisserie chicken instead of raw. Want extra smoky flavor? Add a pinch of smoked paprika or a swirl of BBQ sauce.
