  • 3 chicken breasts
  • 1–3 tbsp Cajun seasoning adjust to taste
  • 1 tsp salt
  • 1 tbsp olive oil
  • ½ tbsp butter
  • 1 large onion finely diced
  • 2 cloves garlic minced
  • 2 tbsp sun-dried tomatoes chopped
  • 1 tbsp tomato paste
  • 1 cup orzo pasta
  • 1 cup chicken broth
  • 1 cup shredded spinach
  • ¼ cup heavy cream
  • 3 tbsp Parmesan cheese grated

Instructions
 

  • Season the chicken breasts with Cajun seasoning and salt, coating evenly.
  • In a large skillet, heat olive oil and butter over medium heat. Add chicken and sear until golden. Remove and set aside.
  • In the same skillet, add onion, garlic, sun-dried tomatoes, and tomato paste. Cook for 5 minutes until softened and fragrant.
  • Add the orzo and stir to coat in the pan juices. Toast for 1 minute for a nutty flavor.
  • Pour in chicken broth, stir, and bring to a gentle simmer. Cover and cook, stirring often, until orzo is tender and creamy.
  • If needed, add more broth to maintain a creamy consistency. Then stir in shredded spinach until wilted.
  • Add heavy cream and Parmesan. Stir until cheese melts and sauce turns glossy. Return chicken to pan and let rest briefly before serving.

Notes

Start with less Cajun seasoning if you're unsure about the spice level. For a lighter version, use coconut cream instead of heavy cream. This dish also works well with chicken thighs or extra vegetables like mushrooms or bell peppers.
