Ingredients
  

  • 2 tbsp olive oil
  • 1 medium onion finely chopped
  • 3 cloves garlic minced
  • 1 lb cooked chicken breast shredded, rotisserie chicken works well
  • 2 cans great northern or cannellini beans 15 oz each, drained and rinsed
  • 1 can diced green chilies 4 oz
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp oregano
  • 3 cups low-sodium chicken broth
  • 1/2 cup sour cream or Greek yogurt for a lighter version
  • 1/2 cup shredded Monterey Jack or pepper jack cheese
  • salt and black pepper to taste
  • fresh cilantro and lime wedges for garnish

Instructions
 

  • In a large pot, heat olive oil over medium heat. Add the onion and sauté until soft and translucent, about 3–4 minutes.
  • Stir in the garlic and cook for another 30 seconds until fragrant.
  • Add shredded chicken, beans, green chilies, cumin, chili powder, paprika, and oregano. Stir well to coat everything in the seasonings.
  • Pour in chicken broth and bring to a gentle simmer. Let it cook uncovered for 15–20 minutes, allowing the flavors to blend.
  • Reduce heat to low and stir in sour cream and shredded cheese until melted and creamy. Season with salt and pepper to taste.
  • Ladle into bowls, top with cilantro and a squeeze of lime juice, and enjoy warm.

Notes

For extra creaminess, mash a few of the beans before adding. Use rotisserie chicken for convenience. Adjust spice levels with jalapeños or cayenne. Avoid boiling after adding dairy to prevent curdling.
