Main Ingredients

  • 2 lbs boneless, skinless chicken breasts tender, lean protein that shreds beautifully
  • 1 can (15 oz) white beans drained and rinsed
  • 1 can (15 oz) corn kernels drained
  • 1 can (4 oz) diced green chiles
  • 3 cups low-sodium chicken broth
  • 1 block (8 oz) cream cheese cubed
  • 1 medium onion diced
  • 3 cloves garlic minced
  • 1 tsp ground cumin
  • 0.5 tsp chili powder
  • 0.5 tsp paprika
  • salt and pepper to taste

Optional Ingredients

  • 0.5 cup Greek yogurt for extra creaminess
  • fresh cilantro for garnish
  • lime wedges for serving

Instructions
 

  • Prep your ingredients: dice the onion, mince the garlic, and drain and rinse the beans and corn.
  • Layer in the slow cooker: Add chicken breasts first, then onion, garlic, beans, corn, and green chiles. Sprinkle with cumin, chili powder, paprika, salt, and pepper.
  • Pour chicken broth over everything. Do not stir. Cover and cook on low for 6–7 hours or high for 3–4 hours.
  • Shred the chicken: Remove the chicken, shred with two forks, and return to the pot.
  • Add cubed cream cheese and stir gently until melted and smooth. Let cook another 30 minutes.
  • Serve with optional toppings like shredded cheese, cilantro, or lime wedges. Enjoy!

Notes

Make it your own by using chicken thighs, adding heat with jalapeños, or keeping it dairy-free with coconut cream. This chili also works great in wraps, over greens, or served with roasted veggies.
